Recipe: Fallasburg Tacos

OK, I have to admit it. I love this recipe. A Fallasburg Taco is a baked t0rtilla filled with Chorizo sausage and cheese. It is then cut in half on a small bed of lettuce or cilantro, to let the ooey-gooey cheese and chorizo release. It is then topped with the other items that would be associated with an American taco. Here are the steps to achieve this super-tasty dinner:

  • Chop the following:
    • Cilantro
    • Tomato
    • Fresh jalapeno (or use pickled ones)
    • Onion
    • Iceberg lettuce
  • Shred some cheese, half for in taco and half for topping.
  • Prepare chorizo (recommend Purnell’s Old Folks) or beef/chicken meat
  • Preheat oven to 400 degrees
  • Take a small flour tortilla and spray both sides with oil
  • Place cheese (cheddar, colby jack, or Mexican cheeses) and chorizo in tortilla
  • Fold it over to seal it
  • Line them up on a jelly roll pan or baking sheet and spray the top again with the oil
  • Bake for 10 minutes on one side, flip and bake for 5 more minutes until the tortilla gets golden brown
  • Prepare plate with a small bed of finely shredded iceberg lettuce (maybe a 1/4 cup)
  • Remove from oven, cut the tortilla in half and place on bed of lettuce
  • Top the taco with your favorite condiments, mine are:
    • A bunch of fresh cilantro
    • Chopped tomatoes
    • Jalapenos
    • Red Herdez chile sauce
    • Shredded cheese
    • Black olives
    • Chopped onion
    • Chile powder (Check out my secret blend)

    That’s it! Really easy as well. I like the chorizo sausage variant, but beef and chicken taco meat would work. Refried beans could also be a vegetarian version.

  1. Just to be clear – I made this up! There is no official Fallasburg taco. It is just where I thought of the recipe!
