Recipe: Basil Turkey Tacos

This is one of the better lunches I’ve had recently since I’m temporarily work from home. So good, I’m sharing it here! Here are the ingredients:

  • Flour tortillas
  • Strips of grilled turkey
  • Shredded lettuce (darker lettuce like bibb or romaine are good)
  • Thin strips of fresh peeled carrots
  • Mayonnaise
  • Diced tomato
  • Sweet basil dressing (Recipe follows)

It all starts with the turkey. I don’t buy much lunchmeat anymore as I prefer to cook a whole piece of meat and carve it up for sandwiches. I’ve been buying whole turkey breasts, sometimes called Turkey London Broil, and grilling them like this (ignore the hamburgers):


This poultry goodness will last all week or longer in the refrigerator. I season it with my homemade chili powder on the grill, then cut it up and put it in the refrigerator for the week.


  • Warm up the tortillas on a skillet to get them slightly crispy, yet still pliable.
  • Take some of the turkey and cut in to long strips, small enough to bite
  • Lay 3 or 4 strips in the tortilla
  • Place lettuce on top
  • Place diced tomato on top
  • Place carrot strips in same direction as turkey
  • Provide a little swipe or squirt of mayonnaise
  • drizzle with sweet basil dressing

Sweet Basil Dressing recipe:

  • Fill a food processor with about 3/4 cup of loosely packed fresh, non-dried basil leaves (stems removed)
  • Add 1/3 cup canola or other light oil
  • Add 1/3 cup honey
  • Add 1/3 cup white vinegar
  • Add splash of apple cider or red wine vinegar
  • Add 1 tablespoon fresh ground pepper
  • Add 3 dashes of salt
  • Blend in food processor until very green and leaves broken down
